Traditional diets inspired by rich culinary histories can offer valuable clues and form a guide to delicious, healthy eating. These time-honoured eating patterns point to the abundance of the earth’s harvest, highlighting seasonal and regional produce and the pleasures of the table. This Food as Medicine series takes a look at three popular international cuisines to see what their culinary traditions and knowledge can offer us in today’s fast-food culture.
MARCH 19 — MEDITERRANEAN
Why is the Mediterranean home to one of the most popular diets in the world?
The Mediterranean Diet is inspired by the traditional eating patterns of those living in the regions that border the Mediterranean Sea. This talk will examine the health benefits of the foods associated with this diet; with an emphasis on olive oil and other healthy fats.
MARCH 26 — INDIA
Origin to a 5,000 year history of plant-based cuisine.
All international health agencies now advocate the inclusion of more plants in the diet. India has mastered this protocol. For thousands of years India has practiced a self-care system called Ayurvedic medicine – ‘healing with food’. This talk will examine the basics of Ayurveda, the healing power of spices, and offer practical ways of including more plant foods into your diet.
APRIL 2 — JAPAN
A simple mineral and flavour-rich diet of whole seasonal food.
In 1908 a Japanese chemist discovered Umami, the fifth taste. Umami means ‘delicious flavour’, and the cuisine of Japan is full of this deep, rich taste. This talk is an exploration of the ingredients that contain it, and how to develop and expand this taste in your kitchen repertoire. We will also look at how aesthetics can bring healing and harmony to your table and mind.

Joseph Forest is a professional holistic chef, best-selling cookbook author, and consultant with over 40 years of culinary experience. Chef Joseph’s understanding of food as medicine and traditional diets are the foundation of his current and expanding work. His passion for cooking expresses itself in the preparation, presentation and teaching of whole food as a path to healing and well-being. His appearances on television, radio, and cooking stages in Canada and the USA have been a source of learning and inspiration for audience where he shines in his enjoyment of teaching people the skills and merits of eating well to be well.
